Light, fresh and local are likely to be the watchwords on the menu at the new Vasa Waterfront Kitchen in Salisbury, perched on the Merrimac with a view of the marina and the tidal river just beyond

“I’m not a big fan of heavy sauces and plates,” says T.J. Bernard, head chef at the spot, opening in the former Stripers Grill & Inn location next month. “I take pride in using the freshest, highest quality seafood and produce, and my goal is to have those products be the star of the show.”

Bernard, who grew up in New England, plans to source as much local product as he can. “I have a passion and respect for what each season has to offer,” Bernard says. “Developing strong working relationships with local farmers has had a huge impact on my menus.” 

Bernard hopes the restaurant will have something to suit every palate. Menu plans include appetizers like short rib nachos, crab cakes, and seasonal salads, alongside classics like roasted cod, grilled scallops and seared salmon. An in-house pastry chef will prepare desserts daily.

Renovations on the space started in September, when Mark Wojcicki of Wojcicki Development in Amesbury purchased the property. Wojcicki is renovating and running the inn, while Sean Toomey, owner of the popular Crave Food and Wine in Amesbury, operates the restaurant space.

“I’ve wanted to own a waterfront restaurant since I was a kid,” says Toomey. “This is an amazing location, and the dining scene here is booming. Combining my 13 years of restaurant management and ownership experience with Mark’s extensive knowledge of real estate development and construction will be a great fit.”

The new restaurant gets its name from Vasa, a Swedish boat that sank in the 1700s carrying with it, among many things, a store of rum. When the ship was discovered, it held what was found to be the oldest bottle of rum in existence. Since rum will be a specialty at the new spot – more than 50 brands will be behind the extensive bar – the name seemed perfect.

The menu and large rum collection aren’t the only differences patrons of the former Stripers will notice. The extensive salad bar has been replaced with a raw bar, and as Toomey puts it, “Every single paint color, ceiling, floor, light fixture, toilet— you name it—has been replaced, removed and/or revamped. You will not believe your eyes!”

The 275-seat restaurant includes two function rooms seating up to 80 guests, and will be open for lunch and dinner seven days a week, along with brunch on Sundays.
