Something special is brewing in the local food scene in Salem this spring. Neighbors A&J King Artisan Bakers and Notch Brewing have teamed up to create the Notch Pilsner Pretzel, an authentic lye-dipped pretzel made in the traditional German fashion made with Notch Pilsner. The pretzels, which are hand-shaped by free-range bakers, contain a touch of Maine Grains wheat middlings soaked in Notch beer to create more of a regional flair.
“We have always wanted to collaborate with A&J King Artisan Bakers as our brewery is one block away from the original location. When they opened the new facility, it was the perfect time to create a beer pretzel for our tap room. It is really cool!” says Mary Ellen Leahy, co-founder of Notch Brewing.
“We love collaborating with local companies like Notch Brewing. We are always looking for inventive ways to celebrate the freshness of locally-made products,” adds Andy King, co-founder of A&J King Artisan Bakers.
