From the North Shore to the world, this distillery uses the unique seaside terroir of Ipswich to build complex rums that are in demand as far afield as Australia. While Privateer no longer hosts visitors, we are fortunate to find its spirits at many local restaurants like The Deck, which makes a Privateer Painkiller that will cure whatever ails you. Look for Privateer’s first seven-year single-cask release this fall, alongside new Distiller’s Drawer selections, culled from the team’s favorite barrels. Deacon Giles Distillery, Salem
This friendly spot crafts everything from gin to absinthe—not to mention a convenient (and delicious) line of canned cocktails—with careful attention to detail.
