Chef Beni Kurti cooked in Michelin-starred restaurants in his native Umbria, Italy, steeping in the Italian tradition of sourcing the best ingredients and treating them with care, before immigrating with his wife Hortenca Sheshori a decade ago. At their 50-seat restaurant, which opened last fall, all the pastas are made in house, from the tagliatelle for the Bolognese to the tortellini in the Tortellini alla Norcina, a traditional Umbrian dish of pasta stuffed with beef and dressed with a cream sauce and crumbled sausage.
