Ipswich is getting some new flavor this winter with a fresh dining spot. Dave Gillis, a 25 year industry veteran around Boston and the North Shore, is bringing to Market Street his first solo restaurant endeavor, SALT Kitchen & Rum Bar. SALT is a “gastro pub” that presents elevated comfort food in a rustic environment while featuring a 14 seat bar.
The undercurrent of SALT is its commitment to local sourcing-from the North Shore’s rich history of rum production to organic mushrooms from farmers in Newburyport. Whenever possible, SALT strives to support local businesses. Pick how you want to define it: “fish to fork,” “farm to table” or “sustainable dining” but the interpretation is the same-the restaurant sees local products as the most desirable to serve at its tables.
Put your name in for a table at the 50 seat restaurant, then sidle up to the bar for an elegantly crafted cocktail with a side of knowledge about the resurgence of craft distilleries, particularly rum distilleries in the area. When you’re done chatting with the bartender, settle in at a table by the windows, sip some local rum and dig in to a lobster wellington and a bowl of crab and cheddar bisque while taking in the scenes of Market Street.
